Bistek A Caballo is a typical Colombian steak that can be paired with a variety of food. In this video you will learn to prepare it with Hogao and a fried egg. The plating of the final dish includes rice, a side salad, and plating instructions that include the three foods cooked.
INGREDIENTS
2 lbs. Beef tenderloin or tenderloin (tender meat), divided into 4 portions
Salt & pepper to taste
1 teaspoon thyme
1 teaspoon dried oregano
½ teaspoon cumin powder
FOR THE HOME
2 tablespoons olive oil
1 medium white onion, chopped
3 branches green onion
2 garlic cloves, chopped
4/5 medium tomatoes, chopped
Salt to taste
1 teaspoon triguisar.

PREPARATION
1.We prepare our meat, we add salt, black pepper, thyme, dried oregano, minced garlic, cumin powder and coriander. We preferably leave these meats overnight in this marinade, taking into account that all meats are well covered.
2. In a large frying pan, add the olive oil, let it heat for 2 minutes and add the meats and let them cook for 4 minutes on each side
3. Separately prepare the hogao or stew in another frying pan, place the olive oil, add the Finely chopped white onion, green onion and tomatoes, a little salt, a little pepper, let them fry until our ingredients are well cooked, finally we add a bit of triguisar, to give it a traditional color and flavor.
4. We fry the eggs, preferably that the flame is soft, but whatever your preference.
5. Now we place the meat on a plate, on this we add a good amount of hogao and on top of this the egg. We can accompany this dish with rice, slices of ripe banana, a portion of Creole potatoes, a cabbage, carrot, onion and tomato salad, a little lemon and salt.
